Super Quick, Super Easy "Creamy" Avocado Pasta
This is one of my new favorites. All you need is the time to boil and cook the pasta. While the pasta cooks, whip up the yummy avocado sauce in your blender or food processor. You will not believe that there is actually NO CREAM in this savory sauce!
Serves 4
Ingredients
- 2 ripe avocados
- juice of one lemon
- 2-4 cloves garlic (as per your taste)
- 1 tsp salt
- pepper to taste
- 4 servings of the pasta of your choice
Directions:
- Bring enough water to boil for your 4 servings of pasta
- While pasta cooks (about 10 minutes) prepare the sauce
- In food processor or blender, blend garlic and lemon juice until garlic is finely chopped
- Add the avocados, salt, and pepper and whir until smooth and creamy
- Strain the pasta and return to pot. Add the sauce and lightly toss.
- Serve up in separate bowls, or in one large serving bowl
- Garnish with a bit of pepper and fresh basil if desired
- Serve while still warm
Eat up - because avocados turn brown and so any leftovers will not look very tempting to eat later!
